Southwestern Green Chile and Chicken Pasta

Chicken and Green Chile Pasta My husband and I almost never (is that a phrase? Almost Never??) go out to Dinner.  We have always enjoyed staying home and cooking or grilling in the comfort of our own home. BUT.....when the occasional urge to go out to Dinner hits us, we have our local favorites. One is a little Italian place in Rio Rancho, New Mexico called Joe's Pasta House.  It's an authentic New York Italian restaurant where the Chef and Owner provide amazing food that is fresh and delicious.  You dine in a quaint dining room with white table cloths and a guitar player in the corner adding to the ambiance.  The Southwestern Green Chile Pasta with Chicken is my FAV and this is where I was inspired to re-create this dish and make it my own. The dish is not overwhelming with heaviness, just the right amount of cream to add to the decadent flavors of chicken, pasta and, of course, the green chile.   This is so scrumptious, but please I am warning you that this has a bite, but it is so flavorful.  You will not be disappointed.  Enjoy! Fast and Easy Weeknight Chicken Enchiladas with Green Chile Sauce

 This is a fast and easy weeknight throw together meal!  With leftover chicken or store bought chicken, you won't be spending a ton of time putting this together.  I love enchiladas!  It's a go to meal at the spur of the moment, because I can put this together in about 30 minutes or less from prep to oven.  Fast and easy and so awesome!   I love the flat enchiladas over the rolled, although both are great.  Flat is a New Mexico favorite.  I use individual casserole dishes so my husband and I have our own.   Although we make our own green chile sauce, I grab the 505 Green Chile sauce off the shelf of my local store when I'm in a hurry.  You can usually find green chile sauce at most stores, and most Whole Foods and Sprouts carry 505 Green Chile Sauce and typically other brands, as well.

This is a layered dream of ingredients. A comfort food for sure. It's fun putting together this little casserole with all the ingredients of my choice. Sometimes I use black beans, sometimes corn, sometimes both. Your main squeeze here is the chicken, corn tortillas, green chile and, of course, the cheese! I can put these two casseroles together using 1 chicken breast for the two of us, so a little goes along way! Enjoy!

  1. Preheat oven to 350 degrees. Heat your Green Chile sauce in a saucepan just till heated thru. Start by scooping a little sauce in the bottom of your casserole dish, then lay your corn tortillas, flat not rolled, on top of the sauce. Start your layering your goodies. Chicken, onions, black beans, a little green chile sauce. Add 2 more corn tortillas on top of your finished layers, spoon the Green Chile Sauce liberally over the top and then sprinkle the entire casserole with cheese. Spoon a little more green chile sauce on top of cheese, (if you have room!). and Bake 30 minutes or until heated thru and the cheese is bubbly.

I have posted a picture of the 505 Hatch Green Chile Sauce for you to see what it looks like.  It's amazing for an already made sauce.

You can put together a full 9x11 casserole dish, just repeat the instructions on layering and increase your tortillas from 6 to 9 and adjust your ingredients so you have enough to fill a larger casserole dish.

  1. Prepare your ingredients and put in individual bowls. This saves time when you begin to assemble your tacos. Heat 2 Tbsp of EVOO (Extra Virgin Olive Oil) over Med/High Heat, Add Cubed Chicken. Salt & Pepper and add Southwest Seasoning. Add Lime Juice. Saute' for 3 minutes, just until heated thru. If you are using raw chicken, cook for about 7 minutes, tossing and turning until cooked thru. You will love the smell of this chicken! Turn off heat. Warm Corn Tortillas on flat skillet until hot, turning every few seconds. (You can fry your tortillas in Canola Oil, and form your shells, if you want). Assemble your tacos! Start with your cubed Chicken, then add green chili, onion, cilantro, tomatoes, shredded Arugula and finally cheese. Top with your favorite salsa. Serve with extra Salsa and Tortilla chips
  2. Helpful Hint, you can use already roasted chicken that you can cube. My husband is the "grill master" in our house, so every Sunday, he smokes or grills our chicken and pork for the week over Applewood and we use it in my recipe's throughout the week. The meat is so amazing!
  3. The star of this show is the Hatch Green Chili.... It's a beautiful green color and so full of flavor. It has a bite, so be prepared, you can add as much or as little as you like. I like ALOT. It's full of Vitamin C and is good for you...You will acquire a taste for it, just as I did 16 years ago. When we travel, we never go without packing this wonderful food!
Recipe Notes

Southwest Seasoning:

1 tbsp of each of the following:

Salt, sweet ancho pepper, onion, garlic, black pepper, Mexican oregano, cayenne, red pepper, cumin, chipotle and cilantro

Mix together and store in tight container for up to 3 months.
